Vegan Mexican Bean Wraps

These loaded wraps make for a fun and delicious lunch or dinner. If making ahead of time, wrap in plastic wrap for ease.

Ingredients

  • 1⁄2 cup salsa
  • 1 cup black beans, drained and rinsed
  • 4 burrito size tortillas
  • 2 green onions, chopped
  • 1 cup brown rice, cooked
  • 1 avocado, sliced
  • 1⁄4 cup corn
  • 1 cup shredded lettuce
  • 1 tomato, chopped
  • 1⁄4 cup vegan avocado ranch dressing

Directions

  • In a small bowl, mash salsa and black beans together. Spread equal amounts on each tortilla.
  • Fill each tortilla with equal amounts of green onion, rice, avocado, corn, lettuce, tomato and dressing.
  • Fold wraps tightly and serve. Refrigerate leftovers.
