Vegan Mexican Bean Wraps
These loaded wraps make for a fun and delicious lunch or dinner. If making ahead of time, wrap in plastic wrap for ease.

Ingredients
- 1⁄2 cup salsa
- 1 cup black beans, drained and rinsed
- 4 burrito size tortillas
- 2 green onions, chopped
- 1 cup brown rice, cooked
- 1 avocado, sliced
- 1⁄4 cup corn
- 1 cup shredded lettuce
- 1 tomato, chopped
- 1⁄4 cup vegan avocado ranch dressing
Directions
- In a small bowl, mash salsa and black beans together. Spread equal amounts on each tortilla.
- Fill each tortilla with equal amounts of green onion, rice, avocado, corn, lettuce, tomato and dressing.
- Fold wraps tightly and serve. Refrigerate leftovers.
