Vegan French Dip

Ingredients

  • 1 tbsp. olive oil, divided
  • 1 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 3 portobello mushroom caps, sliced thin
  • 1 cup vegetable broth
  • 1 tbsp. vegan worcestershire sauce
  • 1 tbsp. tamari
  • 1⁄4 liquid smoke
  • 1⁄2 tsp. thyme
  • Black pepper
  • Spicy mustard (optional)
  • Crusty french bread, cut into 2 sections and sliced open

Directions

  • Heat 1/2 tablespoon oil in large skillet over medium-low heat. Add onion and cook until caramelized, about 15 minutes, stirring occasionally. Add garlic and cook 2–3 minutes. Remove from skillet and set aside.
  • To same skillet, add remaining tablespoon oil and mushrooms. Raise heat to medium; cook 12 minutes, stirring every 3–4 minutes.
  • Return onion mixture to skillet, then add broth, worcestershire sauce, tamari, liquid smoke, thyme and pepper, to taste. Simmer 5 minutes, stirring occasionally.
  • Spread spicy mustard on inside of bread, if desired. Using slotted spoon, divide mushroom mixture evenly between bread. Add remaining liquid to 2 serving bowls for dipping.
  • Serve, refrigerating any leftovers.
