Sweet Corn Guacamole
Loaded with corn and topped with pepitas and cotija cheese, this fully loaded guacamole is an extra refreshing treat.

- 4 avocados, peeled and pitted
- 1⁄4 cup red onion, chopped
- 1⁄4 cup cilantro, chopped
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 2 tablespoons lime juice
- 1 teaspoon salt
- 1 Roma tomato, seeded and chopped
- 1⁄2 cup sweet corn kernels, cooked
- 2 tablespoons pepitas
- 2 tablespoons cotija cheese, crumbled
- Tortilla chips, to serve
- In large bowl, mash together avocados, red onion, cilantro, jalapeno, lime juice and salt. Fold in tomato and corn.
- Top with pepitas and cotija cheese.
- Serve with tortilla chips. Refrigerate leftovers.
