Slow Cooker Italian Beef Sandwiches

Let your slow cooker do the heavy lifting for dinner tonight with these hearty beef sandwiches.

Ingredients

  • 5 pounds chuck roast, trimmed of excess fat
  • 2 packages (0.6 oz.) Zesty Italian Dressing and Marinade Mix
  • 1 cup beef broth
  • 1 jar (8 oz.) giardiniera, drained
  • Crusty Rolls or Hoagie Buns
  • Sliced provolone cheese
  • Pickled peppers or additional giardineira

Directions

  • Rub dressing mix on meat; place in a 5 quart or larger slow cooker. Add broth and giardiniera. Cook on low heat 7-8 hours or until meat falls apart easily. Shred meat and return to slow cooker cooking liquid.
  • To assemble sandwiches, split roll, place desired amount of meat and top with 1-2 slices of cheese and sweet or hot pickled peppers and or giardineira. Refrigerate leftovers.
