Ingredients
- 6 slices bacon, cooked, crumbled, drippings reserved
- 2 pounds Simple Truth™ Natural Angus Beef Top Sirloin
- 1 white onion, sliced
- 1 cup Simple Truth Organic™ Peeled Carrots
- Coarse salt and freshly ground pepper, to taste
- 3 tablespoons all-purpose flour
- 1 can (14.5 oz.) beef broth
- 1 tablespoon Simple Truth Organic™ Tomato Paste
- 2 garlic cloves, minced
- 1⁄2 teaspoon dried thyme
- 1 Simple Truth Organic™ Bay Leaves
- 16 ounces sliced button mushrooms
- 1 tablespoon olive oil
- 2 cups pearl onions
- 1⁄2 cup red wine
Directions
- Brown beef cubes in reserved bacon drippings; place in a slow cooker.
- In skillet, add onion, carrots, salt and pepper. Stir in flour. Add broth and tomato paste; mix well and pour over beef.
- Sprinkle bacon, garlic and herbs over beef. Cover and cook on low for 8-10 hours.
- One hour before ready, sauté mushrooms in oil; add to slow cooker along with pearl onions and wine.
- Discard bay leaf and serve.
