Ingredients

  • 6 slices bacon, cooked, crumbled, drippings reserved
  • 2 pounds Simple Truth™ Natural Angus Beef Top Sirloin
  • 1 white onion, sliced
  • 1 cup Simple Truth Organic™ Peeled Carrots
  • Coarse salt and freshly ground pepper, to taste
  • 3 tablespoons all-purpose flour
  • 1 can (14.5 oz.) beef broth
  • 1 tablespoon Simple Truth Organic™ Tomato Paste
  • 2 garlic cloves, minced
  • 1⁄2 teaspoon dried thyme
  • 1 Simple Truth Organic™ Bay Leaves
  • 16 ounces sliced button mushrooms
  • 1 tablespoon olive oil
  • 2 cups pearl onions
  • 1⁄2 cup red wine

Directions

  • Brown beef cubes in reserved bacon drippings; place in a slow cooker.
  • In skillet, add onion, carrots, salt and pepper. Stir in flour. Add broth and tomato paste; mix well and pour over beef.
  • Sprinkle bacon, garlic and herbs over beef. Cover and cook on low for 8-10 hours.
  • One hour before ready, sauté mushrooms in oil; add to slow cooker along with pearl onions and wine.
  • Discard bay leaf and serve.
