  • 1 bunch rainbow carrots, peeled and some of the greens cut off
  • 2 tablespoons Simple Truth Organic™ Italian Extra Virgin Olive Oil
  • Freshly ground pepper, to taste
  • Coarse salt, to taste
  • 1 tablespoon Simple Truth Organic™ Rosemary

Directions

  • Preheat oven to 450°F.
  • Place carrots on baking sheet. Drizzle with olive oil, salt and pepper and sprinkle with rosemary. Roast for 12 to 15 minutes or until crispy and cooked.
