Rhubarb and Vanilla Bean Simple Syrup
This simple syrup is tasty in a cocktail, in lemonade or with sparkling water. It also gives you a reason to use leftover vanilla bean pods.

Ingredients
- 8 oz. rhubarb, chopped
- 1 1⁄2 cups water
- 1 vanilla bean pod, seeds included (or a leftover pod from different use)
- 1⁄2 cup sugar
Directions
- In a medium saucepan, add rhubarb and water. Bring to a boil and cook about 20 minutes. Skim off any foam that rises to the top.
- Add vanilla bean pod and sugar to the liquid. Bring to a simmer and cook about 5 minutes, until sugar is dissolved. Remove from heat and use a fine-mesh strainer to separate rhubarb from liquid. Place liquid in a clean saucepan. Discard rhubarb and pod.
- Set aside to cool completely. Seal and refrigerate until ready to use.
