One Bowl Vanilla Cupcakes

Ingredients

  • 1⁄2 cup butter, melted and cooled slightly
  • 3⁄4 cup sugar
  • 1⁄2 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1⁄2 teaspoon fine salt
  • 1 1⁄2 cups all-purpose flour
  • 1 1⁄2 teaspoons baking powder

Directions

  • Preheat oven to 350°F. Line 12 muffin cups with liners; set aside.
  • In large bowl, whisk together butter, sugar, milk, eggs, vanilla and salt until well blended.
  • Whisk in flour and baking powder to thoroughly combine.
  • Divide batter evenly between prepared muffin cups.
  • Bake 18-22 minutes or until toothpick inserted in center comes out clean. Let cool in pan 5 minutes before removing to wire rack. Cool completely before frosting.
  • Store in airtight container at room temperature or wrap and freeze for up to 2 months.
