No-bake Apple Pie Tiramisu

Ingredients

  • 3 Granny Smith apples, finely chopped
  • 2 tbsp. lemon juice
  • 1⁄4 cup brown sugar
  • 1 tbsp. all-purpose flour
  • 2 tsp. ground cinnamon, divided
  • 1 (3.4 oz.) package vanilla instant pudding mix
  • 1 tsp. apple pie spice
  • 2 3⁄4 cups milk, divided
  • 1 1⁄4 cup heavy whipping cream
  • 1⁄2 cup powdered sugar
  • 1 (8 oz.) package cream cheese, softened
  • 1 (7 oz.) package ladyfingers
  • 1⁄4 cup caramel sauce

Directions

  • In a large skillet over medium heat, add apples, lemon juice, brown sugar, flour and 1 teaspoon cinnamon. Stir until well combined, then cook 10-15 minutes, until softened. Let mixture cool completely.
  • In a medium bowl, combine vanilla pudding mix, remaining 1 teaspoon cinnamon and apple pie spice. Stir in 1¾ cups milk and whisk until pudding has dissolved. Refrigerate 10-15 minutes, until firm.
  • In a large bowl, using an electric hand mixer, beat heavy cream until stiff peaks form. Add powdered sugar and beat until combined. Set aside.
  • In a separate large bowl, add cream cheese. Use electric hand mixer to beat until light. Slowly add pudding mixture and beat until just combined. Fold in about half of the whipped cream mixture.
  • Prepare a 9”x9” pan with parchment paper. Place remaining 1 cup milk in a shallow bowl. Dip ladyfingers in milk, then place in an even layer on the bottom of the pan. Drizzle with about 1 tablespoon caramel sauce.
  • Layer half the mousse on top of the ladyfingers in an even layer. Add half of the apple mixture and gently press into the mousse. Repeat this layering, starting by dipping another layer of ladyfingers in milk and ending with a layer of apple mixture. Top the finished tiramisu with remaining whipped cream.
  • Refrigerate about 1 hour, then drizzle remaining caramel sauce over tiramisu before serving.
  • Serve and refrigerate leftovers.
