Ham and Cheese Kimbap

This version of kimbap packs perfectly in a school lunch box. The ham and cheese pair deliciously with the crunchy carrot and bell pepper. Get the kids involved by having them help layer the ingredients and make their own rolls.

Ingredients

  • 1 1⁄2 cups sushi rice
  • 2 cups water
  • 1 tbsp. rice vinegar
  • 2 tsp. sesame oil, plus more to brush, if desired
  • 4 sheets nori seaweed
  • 1⁄2 cup matchstick carrots
  • 2 Persian cucumbers, julienne cut
  • 1 red bell pepper, julienne cut
  • 1 avocado, thinly sliced
  • 4 oz. cheddar cheese, julienne cut
  • 8 oz. Deli ham, thinly sliced

Directions

  • Rinse rice in cold water, then place in a medium saucepan. Add water and bring to a boil. Reduce heat to low, cover and cook until water is absorbed, about 20 minutes. Transfer to a bowl and allow to cool completely.
  • Add rice vinegar and sesame oil to the cooled rice.
  • Place a sheet of nori on a bamboo sushi mat. Spread an even layer of rice, just to the edges. Place carrots, cucumber, bell pepper, avocado, cheese and ham in even layers on the rice.
  • Carefully lift the bottom end of the nori to cover the ingredients, then gently roll the nori to the top. Use a little water to seal the nori, if needed.
  • Repeat with remaining ingredients. Once rolled, brush with sesame oil, if desired and cut into bite-sized pieces.
  • Serve and refrigerate leftovers.
