Football Vegan Sweet Potato Brownies

Sweet potatoes are the secret ingredient in these fudgy, chewy vegan brownies. The fun shapes will make for a great addition to any football watch party.

Ingredients

  • 2 medium sweet potatoes
  • 1⁄2 cup almond butter
  • 3⁄4 cup vegan sugar
  • 2 tbsp. vegetable oil
  • 1⁄2 cup unsweetened cocoa powder
  • 1⁄2 cup all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1⁄2 tsp. salt
  • 1 cup vegan dark chocolate chips
  • Vegan white icing

Directions

  • Preheat oven to 350F. Prepare a 9"x9" baking pan with parchment paper. Spray with nonstick cooking spray and set aside.
  • Poke sweet potatoes all over with a fork. Microwave 4-5 minutes, until very tender. Cut sweet potatoes open and mash insides with a fork. Measure 1½ cups mashed sweet potato and place in a bowl. Reserve any leftover sweet potato for another use.
  • Add almond butter, sugar and oil to the sweet potato. Stir until smooth and add cocoa powder, flour, baking powder, vanilla and salt. Fold in chocolate chips. Spread mixture onto a pan.
  • Bake 25-30 minutes, until a toothpick inserted in the center comes out clean. Allow to cool about 1 hour. Use a football-shaped cookie cutter to cut out football brownies. Place onto a tray.
  • Use white icing to decorate laces on each football and serve.
