Cucumber Hummus Sandwich

Ingredients

  • 8 slices seedless rye bread, toasted
  • 8 slices Swiss cheese
  • 12 slices plum tomato
  • 16 slices English cucumber
  • 12 slices avocado
  • 4 leaves Romaine lettuce
  • 1 jar (12 oz.) roasted red pepper pieces
  • 1⁄4 cup avocado oil mayonnaise
  • 1⁄2 cup hummus

Directions

  • On bottom bread slice, spread 2 tablespoons hummus.
  • On top bread slice, spread 1 tablespoon avocado oil mayonnaise.
  • Between top and bottom bread slices, layer 2 slices cheese, 3 tomato slices, 4 cucumber slices, 3 avocado slices, 1 piece lettuce and 1 piece roasted red pepper.
