Cohos or “Silvers” (the market name) are the second largest of the five Alaskan salmon species, with an average weight of 12 pounds, and are also the salmon family’s best-kept secret. Considered to be an excellent eating fish, they are a perfect choice for grilling with their orange-red flesh, firm texture, and delicate flavor. They are low in saturated fat and an excellent source of omega-3 fatty acids, high-quality protein, and potassium.
