Affordable Slow Cooker Meal Ideas

It’s no secret that your slow cooker can save time and money in the kitchen. Freezer to Slow Cooker Chipotle Chicken and Black Beans

Ingredients:

  • 2 lbs. boneless skinless chicken thighs, cut into 2” pieces
  • 2 cans (15.25 oz. each) Kroger Brand Black Beans, drained and rinsed
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 can (14.5 oz.) Kroger Brand Petite Diced Tomatoes in Tomato Juice

  • 1 chipotle in adobo pepper, finely chopped
  • 1 Tbsp. chipotle in adobo sauce
  • 2 tsp. salt
  • 1 tsp. ground black pepper
  • 1 tsp. ground cumin
  • 1 tsp. garlic powder

Ingredients:

Directions:

  1. Label a 1-gallon freezer bag with recipe name and date. In bag, combine all ingredients; seal, removing as much air as possible. Lay flat. Freeze for up to 3 months.
  2. To prepare, thaw bag overnight in refrigerator.
  3. Place contents of bag in slow cooker. Cover; cook on LOW heat 6 hours or until chicken is tender and internal temperature is at least 165°F.

  • 6 resealable glass jars (8 oz. each)
  • 6 oz. ham, diced
  • 2 cups baby spinach, chopped

  • 12 large eggs, beaten
  • 6 Tbsp. half and half
  • 1 tsp. salt
  • ½ tsp. ground black pepper

Directions:

  1. Oil the inside of each resealable glass jar. Evenly divide ham, spinach, green onions and cheese between each jar.
  2. In large spouted measuring cup, whisk together eggs, half and half, salt and pepper. Divide egg mixture evenly between jars.
  3. Place filled jars in a slow cooker. Carefully add water until it’s about ¾ of the way up the outsides of the jars.
  4. Cover and cook on LOW 2½-3 hours or until eggs are set.
  5. Eat immediately or cool completely and cover with jar lids. Store refrigerated. To reheat, remove lid and microwave 60-90 seconds.

  1. In small bowl, combine salt, pepper, garlic and onion powder; set aside.
  2. Pat pork shoulder dry. Brush with maple syrup and season with spice blend.
  3. Place pork in 6-quart or larger slow cooker. Add apple cider vinegar and apple juice.
  4. Cover and cook on LOW 7-8 hours or until pork is tender.
  5. Using two forks, shred meat.

  • 1 cup sour cream
  • 1 Tbsp. fresh lime juice
  • 2 tsp. lime zest

  • 3 lbs. fresh chicken wings
  • 1¼ tsp. salt
  • ½ tsp. pepper
  • ⅓ cup sriracha hot sauce
  • ¼ cup plus 1 Tbsp. honey, divided
  • 2 cloves garlic, finely chopped
  • 1 cup sour cream
  • 1 Tbsp. fresh lime juice
  • 2 tsp. lime zest

Directions:

  1. Set oven to broil. Line large rimmed sheet pan with foil; place a large rectangular wire rack on top; spray both with cooking spray.
  2. Place chicken pieces in single layer on rack; sprinkle 1 teaspoon salt and pepper over chicken. Broil 3” from heat 10-12 minutes or until browned, turning halfway through broiling time.
  3. Spray 4-quart slow cooker with cooking spray. Place chicken in slow cooker. In small bowl mix hot sauce, ¼ cup honey and garlic until well blended. Pour over chicken, stir to coat.
  4. Cover; cook on LOW 3 hours. Remove with tongs or slotted spoon; discard cooking liquid.
  5. In small bowl, mix together sour cream, lime juice, zest and remaining honey and salt until well blended.
  6. Serve chicken wings with lime sour cream and additional hot sauce, if desired.
